Healthy & Delicious Breakfast bowl (GF)

Came home from a long run and decided to make a breakfast bowl for one, relishing the process of cooking and savoring each bite (quick video of the process below recipe!)

This might not seem revolutionary to some, but as a caregiver to a partner, 4 kids, and a puppy, I've learned I must be intentional with my self-care. The days of giving from an empty cup are coming to an end.

No one is nourished if the cook isn’t fed, yet somehow that became the mold many of us live our lives inside—a contest of how empty you can be and still keep giving.

Cooking food and putting food out for others so you can go do the dishes and not eat until the scraps come back doesn’t serve anyone.

The model of “I take care of you, but I don’t take care of myself. Taking care of you takes care of me,” is not love, it’s codependency.

A new story sounds like: I’m taking care of me and you. When I nourish myself, I can nourish you in a truer, deeper way, and we can both be fed. When I take care of myself, I see and feel my life in a whole new way. I have space for all of us. I have space for possibility and make decisions and give from a place of fullness.

Okay, now onto the recipe!

Bowls are something I make a lot when feeding myself and the family. Everyone can load up their bowl with what they want and somehow it feels more fun to eat.

There is a lot of freedom in this bowl, use my recipe as a guide to create something you love.

Breakfast Bowl recipe

1 Potatoes

Chop potatoes and soaked in ice water

Dry potatoes, toss is a high smoke point oil (I used grapeseed), and season with salt and smoked paprika

Add to preheated air fryer and cook at 390 for about 27 minutes

2 Sausage

Cook sausage (I used vegan) with diced onions, remove from pan

3 Eggs

Wisk eggs and cook to make scrambled eggs, top with sharp cheddar (if desired)

4 Herbs

Chop parsley and green onion or desired herbs

5 Assemble bowl

Assemble your bowl, I topped mine with extra hot Franks and Dijon mustard
