Savory Beef Kofta

Food ruts are normal. 

One of the problems is that everyday, multiple times a day, people need to eat!

While I’m kidding about this obvious fact, anyone who has been in charge of procuring and cooking food for themselves or a family night after night understands the challenge of coming up with something new (and inexpensive and healthy and tasty) every single day.

It’s helps to have a few easy recipes that use basic ingredients but still offer variation from the norm: enter Beef Kofta.

The recipe is simple and uses ingredients I often use but the way it’s prepared makes it taste like something different. 

You can make Beef Kofta with a wide variety of spices, but I like it best with 5 simple ingredients - organic ground beef, onion, garlic, parsley, cumin (and salt).

I like to serve the beef with chimichurri sauce, roasted cauliflower, and roasted sweet potatoes, but it would be great with rice and any veggie you have on hand. 

Ingredients:

  • 1 medium onion, finely chopped

  • 3 cloves garlic, minced

  • 1 cup fresh parsley, chopped

  • 2 pound organic ground beef

  • 2 teaspoons ground cumin

  • 1 teaspoon salt

Instructions:

  1. Combine: In a large bowl, mix together the chopped onion, garlic, parsley, ground beef, cumin, and salt. Use your hands to thoroughly combine.

  2. Shape: Form the mixture in your palms, each about 3-4 inches long and 1 inch thick.

  3. Cook: Preheat your air fryer to 350°F (180°C). Place the kebabs in a single layer in the basket, ensuring they don't overcrowd. Cook for 10-12 minutes or until slightly browned.

  4. Serve: Enjoy your Beef Kofta Kebabs hot with your favorite dipping sauce, rice, and roasted vegetables.
